5 cups Baby spinach, fresh 2 cups Pickles Beets *½ cup Candy Walnuts 2 oz. goat cheese, crumbled 1 tablespoon balsamic vinegar 1-1/2 teaspoons honey 1-1/2 teaspoons Dijon mustard Place spinach in salad bowl. Drizzle with dressing; toss to coat. Top with beets, goat cheese and walnuts. Sprinkle with additional pepper if desired. Yield: 10 servings.
